I love making monkey bread. It’s fun to make (your kids can even help!) and so delicious. Being that it’s still apple season and we have a ton of homemade apple pie filling around our house I searched for a delicious apple pie monkey bread recipe and came up short. Even the most reputable websites used refrigerator dough for their recipes. So I took it in my own hands and made apple pie monkey bread muffins from scratch.
I started with my favorite biscuit recipe, and I added a little extra sugar and cinnamon to the recipe. I then cut the biscuit dough into eighths. It looked like I was making a ton of mini scones for a mini tea party with all of those triangle shaped pieces of dough on the counter.
By the way I accidentally left that counter a battlefield. I had a moment where I wanted to bake everything and I chose to bake this apple pie monkey bread as well as apple pie biscuits. Then I kind of got distracted and forgot about the mess and moved onto something else. AJ cleaned it up for me, but he hasn’t let me forget since. So I guess it’s a good plan to clean up right after your done baking and not to get distracted.
I love how easy these are to throw together, and they’re so delicious, trust me making these from scratch is so much better than making these from refrigerated dough. The small extra steps you’ll have are completely worth it. I actually can’t wait to make these again. I might have to make these this weekend as a little brunch treat.
Apple Pie Monkey Bread Muffins | Print |
- 2 ½ cups white whole wheat flour
- 1 Tablespoon baking powder
- 1 teaspoon salt
- 2 Tablespoon sugar
- 1 teaspoon cinnamon
- ⅓ cup butter, cold
- 1 cup milk
- Cinnamon sugar
- ¼ cup granulated sugar
- 1 ½ teaspoon cinnamon
- Filling
- 7 ounces Apple Pie Filling
- ¼ cup butter, melted
- ½ cup brown sugar
- 1 tsp. vanilla
- 2 tsp. cinnamon
- Preheat oven to 425* open pie filling and dredge a knife through jar to chop the apples into bite sized pieces. Grease a cookie sheet.
- Mix together flour, baking powder, salt, sugar, and cinnamon.
- Cut in cold butter to flour mixture using a pastry cutter.
- Gently Stir in milk using a silicone spatula, add in apple pie filling. Continue stirring until a firm dough forms.
- Use a biscuit cutter or a drinking glass to cut out 6-8 biscuits, cut each biscuit into 8 pieces.
- Use a ziploc bag and place all of the cinnamon, sugar, and biscuit pieces. Shake until biscuits are coated with the cinnamon sugar mixture.
- In a saucepan on medium low heat, melt butter, add the rest of the filling ingredients.
- Stir well until combined and bubbly. Remove from heat.
- In a greased cupcake pan, evenly divide filling evenly among each cup.
- Evenly distribute biscuit pieces among each cup until they’re all filled.
- Bake at 425* for 10-12 minutes or until they start to rise and turn golden brown on top.
- Let cool for 5 minutes, turn pan upside down (on a surface like a cookie sheet) and gently tap to let them fall.
- Enjoy warm.
