BBQ Chicken Potato Skins

October 7, 2013 by Brittany 3 Comments

So we might not actually be grilling in Lambeau (I wish!) but we always put on quite an elaborate spread at home to watch the games.  I love making these BBQ Chicken Potato Skins, these are pretty simple to throw together and I promise they will be a touchdown at your next game day gathering!

This recipe features a baked potato smothered in slow-cooked shredded BBQ chicken, cheddar jack cheese, a dollop of sour cream and green onions. #MyPicknSave #shop #cbias

There’s basically no bad way to serve potatoes. Smothering those delicious baked carbs with cheese, BBQ chicken, and sour cream, well, you’ve got yourself quite a potato.  Add some green onions for some crunch and you know, so you can pretend like you’re not eating something that’s totally bad for you. If it’s got some green in it, it’s gotta be good for you, right?

I’m actually pretty sure that 70% of the reason why I watch football is because we always have tons of great food ready to pig out on. We basically search for any excuse to serve comfort food.
