This blueberry peach cobbler pie recipe is a perfect hyrbid, part pie, part fruit cobbler, all parts delicious. A blueberry peach pie, topped with a brown sugar cinnamon oat cobbler crust. Serve it warm with a scoop of ice cream.
Pie is one of the best desserts in my book. My birthday is later this month and my only request was a birthday pie. Specifically an apple pie from the orchard we grew up going to, even if it’s a 3 hour drive. This pie is that darn good. The top crust almost resembles a sugar cookie, I should probably try my own version, but you can’t beat the original. I’m the kind of person that absolutely loves pie crust, I also love pizza crust, basically I’m a weirdo that loves carbs in any form.
I make my own pie crust, and it’s the best and so simple. For this blueberry peach cobbler pie recipe I use my four ingredient flaky pie crust recipe as the base it’s so easy to put together from things in your pantry. I love being able to make things like pie crust and biscuits from scratch, it always feels great to conjure up your own carbs at home.
So this blueberry peach cobbler pie recipe starts with blueberries and peaches, tossed with flour, sugar and cinnamon. Then it’s topped with a simple cobbler topping, a tasty brown sugar cinnamon oat crumble.
