Want to try curry at home, but you’re not a fan of spicy food? This is a really mild recipe that’s still packed with a lot of flavor. It’s sure to be a family favorite in no time.
If you have toddlers you know where this meal idea came from, a certain Blue Heeler family is obsessed with curry, and it inspired us to make this meal. We also totally get why Bingo and Bluey groan at the idea of curried sausages. It doesn’t look appetizing, it’s like a greenish brown colored slop that looks like it would be served in a cafeteria in the 90’s, but it’s delicious. So let’s ignore the appearance and go on a curry quest together.
We love curry, it’s one of our family favorite meals. Venison and chickpea curry is in our constant meal rotation, it’s a recipe we definitely made up, we’re probably the only weirdos that combine venison and curry, but it’s delicious. So when we heard about curried sausages we were excited to try it out for ourselves. As Wisconsinites with German heritage we love sausages almost as much as we love cheese, so this meal was a match made in curry heaven.
If you’re new to curry I definitely recommend this 3 pack of curry spices from Spicewalla. I bought it as a Christmas gift to my husband (told you we’re weird) and we loved them so much that we’re going to buy the full sized versions now that we know we can’t live without them.
I’ve found that using an air fryer to cook the sausages ahead of time makes it a simple meal to put together. Pan frying the sausages is the authentic way, but the air fryer is a great time saver.
We serve these over our mashed potatoes from scratch, (because we’re still using our potatoes from last summers garden) we just use a simple instapot mashed potato recipe.
Curried Sausages | Print |
- 6 beef sausages
- 1 tbsp olive oil
- 1 onion thinly sliced
- 1⅔ cup beef stock
- 1 cup peas
- 1 tbsp curry powder, we use Madras or Tandoori curry powder
- 1 tbsp cornstarch
- 2 tbsp water
- Cook the sausages whole, I like to use the air fryer, but you could grill or pan fry it. Then cut into bite sized pieces.
- In a frying pan saute onions in olive oil medium heat until translucent. Then add the sausages to the pan with the curry powder, beef stock. Bring to the boil then reduce to a simmer.
- Mix the cornstarch with 2 tbsp cold water in a small dish. Pour into the pan with the curried sausages and gently mix through. Add the peas, and continue cooking for another 5 minutes until the sauce has thickened.
- Serve over mashed potatoes.
