Grandma always makes the best chicken noodle soup, we always beg her to make it when we’re not feeling well. Sometimes we nag her for it just because it’s so delicious, and no one makes it like Grandma. My favorite part of her homemade soup has always been the egg pasta from scratch.
These egg noodles are the absolute perfect addition to any soup. My grandma and I had quite a long phone call trying to figure out the ingredients for these perfect noodles. She doesn’t measure anything and just makes it up as she goes, so it was all a rough estimate. I figured out a good combination in the end though.
Crushed minced onion (with a rolling pin of course) along with a dash of salt and pepper is grandma’s secret to flavorful noodles. I added garlic powder for extra measure.
I normally use a pizza cutter to cut my noodles into strips, but decided some festive snowflakes would give my chicken noodle soup some fun flair. These turned out so cute! In fact, I had stored some soup in mason jars and my grandma and mom insisted that I let them take a jar of soup home with them, because it looked so adorable.
I think that some soup with cute shaped pasta would be perfect in a get-well-soon package, don’t you?
Aliceana was a huge fan of the pasta, and the size of the cutouts made it a perfect toddler finger food!
I cheated and used my Kitchenaid Mixer for the bulk of the kneading. It’s a whole lot easier on your hands!
Making egg pasta from scratch is surprisingly easy, and you can use any seasonings you would like to add some extra flavor to your pasta. I love how versatile this pasta is, I can use it in soups or with marinara sauce for an easy weeknight dish.

- 2 cups flour
- 1 tsp minced onion, crushed
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp pepper
- 1 tsp parsley (optional)
- 4 eggs, beat
- Combine flour and seasonings.
- Form a well in the center of the flour mixture, gradually mix eggs into the flour until combined. (This is where I used my standup mixer)
- On a floured surface knead dough and form into a ball.
- Separate dough into two sections, roll dough out until about ⅛ inch thick.
- Cut dough with a pizza cutter, pasta cutter, or cookie cutter if you’re feeling creative.
- Let dry 2-3 hours.
- Boil in salted water for 10-12 minutes.
