It was just the holidays, and we needed some vegetables after eating practically nothing but chocolate, cookies, and cakes for weeks. So I tossed this together for lunch, it’s kind of like one of those frozen pastas meals you can get at the store. I admit that I definitely bought many of those when we lived in our first apartment with a kitchen the size of a postage stamp. It was a quick dinner for two that I could pop in the microwave, yep. I believe I made it in a giant pink plastic heart shaped bowl.
This garlic and vegetable pasta is perfect for lunch and it’s a lot more flavorful. I even used our broccoli that we grew and harvested this summer. To preserve it we gave it a good clean in salt water, blanched it, then froze it and it tastes like broccoli straight out of the garden. So good! Our corn came from our garden too, but sadly our carrots did not, we still haven’t mastered growing carrots in our soil. So I would say we’re a little different than we were 14 years ago in our little apartment microwaving our dinner.
This would be really good with chunks of grilled chicken or slices of grilled sausages! I love making this for lunch, it makes quite a bit of food and it makes wonderful leftovers.
Garlic and vegetable pasta perfect for lunch | Print |
- 1 tablespoon olive oil
- 3 cloves garlic, thinly sliced
- pinch of red pepper flakes
- 1 head of broccoli diced in bite sized chunks
- 2-3 medium carrots peeled and diced
- 8 ounces of corn
- 16 ounces pasta
- 2 tablespoons butter
- 1 teaspoon garlic powder
- salt and pepper to taste
- Cook pasta according to directions.
- Meanwhile, drizzle olive oil in the bottom of your skillet. Add garlic and red pepper flakes, cook on medium high heat until garlic starts to become fragrant.
- Add your broccoli, carrots and corn, cook for about 10 minutes, stirring occasionally.
- Once pasta is cooked and drained, add butter and stir it in until melted., season with a teaspoon of garlic powder.
- Add pasta to the skillet, stir everything together and season to taste with black pepper and salt.
