Rice Krispies bring back so much nostalgia for me, and I was feeling inspired so I ended up making my very own Rice Krispies layer cake. Perfect and simple for parties. I also made a Minions Rice Krispies cake here.
It was so much easier than I thought it would be! Here’s a little tutorial below, trust me you can make one of these in no time.
First I made the Rice Krispies in 3 separate batches. Melt 3 tablespoons butter with 5 1/2 cups of mini marshmallows and then stir in NINE cups of Rice Krispies. It’s important that you use 9 cups of cereal, it’ll make the Rice Krispies a lot easier to work with.
The first two batches were each pressed into an 8 inch square baking pan that was lined with foil then greased with butter. I let them cool and then used the greased foil to lift the layers out in one neat piece.
The third batch was pressed into a 10 inch loaf pan and a cookie sheet. After the Rice Krispies had cooled in the loaf pan I sliced the loaf into half to make a 5 inch square. I used the Rice Krispies and a cookie sheet to cut out stars for cake toppers.
I then skewered the stars with paper lollipop sticks and used the rest of the lollipop stick to secure the stars to the top of the cake.
To finish I wrapped some ribbon around the bottom of each layer and secured it in the back with a brad. I also used some craft flowers on the edges of the cake to add a little flair. Make sure to remove ribbon, brads, and craft flowers before serving.
This was so much fun to make, layer cakes are normally not my thing, I’m terrible at using frosting and I can’t get cakes to bake evenly to save my life, so this is such a fun alternative for me! You can really customize these for any occasion too, just swap out the topper and ribbon or add frosting.
