In my mind every season is pie season. Maybe it’s because I can whip up a pie crust in a couple minutes, seriously have you checked out my 4 ingredient flaky pie crust recipe yet? It means pies are easily my go-to recipe.
One of my favorite pies to make is a simple strawberry pie. It’s easy to make, delicious, and beautiful, that’s a win win win (whoa three wins!) in my book.
If you have a crowd for dinner you might want to make more than one strawberry pie. When I made this there were 4 of us and we all wanted seconds, and before we knew it the pie was gone.
Don’t you hate when your desserts mysteriously disappear the second that they hit the table? Ok, so it’s not much of a mystery and it’s the reason why I just worked out for an agonizing hour.
Of course it helped that we accompanied it with homemade whipped cream. If you’ve never had homemade whipped cream you are missing out. You can make your own by whipping heavy whipping cream, sugar and vanilla in a chilled mixing bowl for a KitchenAid stand mixer. I have my heart set on buying this KitchenAid (affiliate link) in the future, it has a glass bowl, seriously amazing!
This pie is so simple. Simply bake the pie crust. Arrange your strawberries, then make a strawberry filling on the stove top. Pour the filling over the strawberries and let the pie set up in the refrigerator. Easy peazy! So simple, and the reason why I absolutely love making pies.
Of course you can use store bought crust for this recipe, but I highly recommend that everyone try making their own pie crust at least once. It’s life changing, seriously. Once you make your first flaky pie crust you’ll never go back, and you’ll try to incorporate pies into everything, even dinners. I even make these awesome taco cups with pie crust.

Simple Strawberry Pie | Print |
- 1 pie crust, baked
- 2 ½ quarts fresh strawberries, cleaned
- 1 cup white sugar
- 2 Tablespoons cornstarch
- 1 cup boiling water
- 3 ounces strawberry jello
- Whisk together sugar and cornstarch, add boiling water continue to whisk over medium heat until mixture thickens.
- Add jello mix and stir until smooth, set aside and let the mixture cool.
- Arrange strawberries in baked pie crust, points up.
- Pour jello mixture on top of the strawberries.
- Refrigerate for at least 2 hours to set.
- Serve with whipped cream!
