It’s been so cold and snowy here, it makes me want to hibernate all season long. Some nights you just have to give in, stay inside in the warmth of your home, cuddle up on your couch for a Doctor Who marathon and enjoy some hot chicken noodle soup. Nothing hits the spot better than from scratch chicken noodle soup in these cold winter months
I’ve been making this chicken noodle soup almost every other week. It almost makes Winter tolerable, almost.

When I say this soup is from scratch I mean it, even the broth and pasta were made in my kitchen. You could definitely substitute store bought broth and pasta if you need to, but it probably won’t taste just like grandma’s soup! You can find the recipes for my pasta and broth here of course.
This is one of Aliceana’s favorite meals, she might even take a break from playing with her toy kitchen long enough to gobble up some soup. Her favorite part is the pasta. Like mother like daughter.
Aliceana is definitely turning into a mini me (personality wise, she’s a miniature AJ as far as appearance goes.) Now that I have Netflix I’ve been catching up on TV shows like crazy, and of course that means I finally have to watch Doctor Who. What I didn’t realize was that it would become Aliceana’s favorite show. If she hears the Doctor Who theme song she’ll dance and run onto the couch. So now we have Doctor Who marathons on lazy days and she just loves it. My little Sci-Fi geek, I love it!
This soup is absolutely perfect to enjoy during a quick break while we’re having one of our Doctor Who days. (We’re only on season 3, no spoilers please!) Go make yourself a batch, it’s perfect with a side of science fiction.

Use homemade egg pasta for extra flavor, plus you can cut the noodles in really fun shapes.

Ingredients
Method
- Boil chopped carrots until softened.
- In a stock pot, saute carrots, onions, and garlic in butter until onions.
- Meanwhile, cook pasta as directed, drain and set aside.
- Add chicken broth to the stockpot of sauteed vegetables, season broth with thyme salt and pepper to taste. Then add chicken and pasta.
- Simmer on low-medium heat for about an hour to combine the flavors, stirring occasionally.
- Enjoy this soup hot! This soup is excellent reheated as well!

This is a very easy Chicken Noodle soup recipe that is always good to have when it is so cold outside. It has warmed up where I am at, which is good. I like the carrots and onions in this dish. I will have to make this soon.
