Blueberry Biscuits

Ingredients
  

  • 2 Cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 5 teaspoons sugar
  • 3/4 cup blueberries
  • 1/3 cup butter cold
  • 1 cup milk
  • icing
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla
  • 1 Tablespoons milk

Method
 

  1. Preheat oven to 425*
  2. In a large bowl, mix together flour, baking powder, salt, and sugar. Use a dough cutter to cut in cold butter until mixture resembles cornmeal.
  3. Add blueberries and stir until well coated with flour mixture.
  4. Gradually, add milk and use a silicone spatula to stir mixture until completely incorporated.
  5. Turn onto a floured surface and pat down until you form a slab 1/2 inch thick. Use a biscuit cutter or glass to cut biscuits. Repeat until all dough is used, you should end up with 6 or 7 biscuits.
  6. Bake for 13-15 minutes.
  7. Meanwhile, in a small bowl combine powdered sugar and vanilla, gradually add milk until icing is the desired consistency.
  8. Drizzle on top of warm blueberry biscuits to serve.
