Brown sugar cinnamon pork roast with glazed apples and carrots

Ingredients
  

  • 1 3 pound pork roast
  • 4 large carrots peeled and diced
  • 4 medium apples peeled and diced
  • 1 stick butter
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • pinch of salt

Method
 

  1. Turn slow cooker on high, add stick of butter.
  2. Rub your pork roast with a sprinkle of cinnamon and brown sugar on both sides.
  3. Add your diced apples and carrots to the slow cooker and stir it into butter.
  4. Add cinnamon, brown sugar, and salt to your apples and carrots and stir.
  5. Place the pork roast on top, fat side up.
  6. Let cook for about 6-8 hours on high, stirring the carrots and apples occasionally and basting the roast with the juices.
